Peanut Butter Fudge Bites

One of my own family favorites, a great sweet treat!

Hello all, I hope you’re doing well! Today I’m sharing another recipe with one of my newest favs, Nutsóla! If you follow my blog & recipes, you know that I mentioned them in my previous recipe post with the Strawberry Fudge Bars! My family & I couldn’t get enough of the fudge with the crumbly Nutsóla crust layer that I figured I would mess with another recipe, so here we are! This time it has a bit of a different twist on it, so stay tuned to see what I came up with! Ingredients

What you will need for this recipe…

  • 1 bag Peanut Butter Nutsóla
  • 1 & 1/2 cup peanut butter of your choice
  • 1/4 cup pure maple syrup
  • 6 tbsp melted coconut oil
  • 3 tbsp almond flour
  • 1 tsp vanilla extract

Method

  1. Line a (9×5) loaf pan with parchment paper and set aside.
  2. Mix the Nutsóla mix in a large bowl according to package (with 2 tbsp of water).
  3. Press 1 cup of the Nutsóla mix into the bottom of the loaf pan, pack it down & set aside.
  4. In a blender mix the peanut butter, maple syrup, coconut oil, almond flour & vanilla extract.
  5. Pour half of the mixture over top of the Nutsóla layer & spread evenly.
  6. Freeze for 30 minutes.
  7. Pack another 1 cup of Nutsóla mix down & pour the rest of the peanut butter mixture over the top & sprinkle with remaining Nutsóla crumbs.
  8. Freeze for 30 more minutes.
  9. Remove & slice into bite sized cubes & store in the freezer!
