Strawberry Fudge Nutsóla Bars

The perfect summer treat!

Hello everyone, I hope this blog post is finding you well! I want to share something super special with you guys today, and that is Nutsóla, the company behind the original DIY superfood bar. These have been circling the internet for months and I have finally had the opportunity to not only try them out, but also create a super delicious recipe for you all! I love this company because first off, it’s a genius idea, second it’s SO SO easy to do and the best part is for 1 bag of mix bought they donate a bar to those less fortunate! They have so many different flavors and there’s just an endless number of ways to use their superfood mixes, without all the crappy ingredients (EVEN BETTER). So, lets get to the good stuff!

Finished Product

What you will need for this recipe…

For the bottom layer:

  • 1 bag of Nutsóla superfood mix, flavor of your choice

For the top layer:

  • 2 cups sliced fresh strawberries
  • 1/2 cup smooth nut/seed butter (I used cashew butter)
  • 6 tbsp melted coconut oil
  • 1/4 cup maple syrup
  • 2-3 tbsp coconut flour
  • 1 tsp vanilla extract
  • Shredded coconut

  1. Grab a loaf pan, size doesn’t necessarily matter but I used 9×5 inch, and line it with parchment paper.
  2. Mix your Nutsóla mix according to the back of the package (with 2 tbsp of water). Pour into the bottom of the loaf pan and pack it very thoroughly using one of your Nutsóla plates. Set aside.
  3. Grab your blender and add in your sliced strawberries and puree for a few minutes.
  4. Add in the rest of your ingredients besides the shredded coconut, and blend until smooth.
  5. Pour the mixture on top of the Nutsóla crust, make sure it’s spread evenly, and top with lots of shredded coconut.
  6. Place the loaf pan into the freezer for about 30 minutes to set.
  7. ENJOY!
