Chocolate Blueberry Tahini Cookies

A cookie recipe that will not let you down, I promise!

Hello everyone! Sorry for the lack of blog posts lately as I have been traveling a lot and preparing for some major changes in my life! Although I’m used to a lot of change in my life, I feel as if change is something that you can never fully prepare yourself for, and I am learning that that is A-OKAY! Hopefully I will be able to get you all some more new recipes in the coming weeks! As you can see I still haven’t gotten off my tahini baking kick, because I am just THAT obsessed with the taste! So lets get to the good stuff!

Ingredients

What you will need for this recipe…

  • 1 cup oat flour (I used Bob’s Red Mill)
  • 1 cup tahini
  • 1/2 cup maple syrup
  • 1/2 cup fresh blueberries
  • 1/2 cup old fashioned rolled oats (I used Bob’s Red Mill)
  • 1/2 cup mini chocolate chips (I used Enjoy Life brand)
  • 1 egg replacer (using Bob’s Red Mill Egg Replacer)
  • 1 tsp baking soda
  • Sea salt flakes

Method

  1. In a large mixing bowl, mix all of the ingredients BESIDES the egg replacer and baking soda.
  2. Place the bowl into the freezer for about 30 minutes.
  3. Meanwhile preheat the oven to 350F and line a baking sheet with parchment paper.
  4. Prepare your egg replacer and let sit for 5-10 minutes.
  5. Remove the bowl from the freezer and add in the remaining two ingredients.
  6. Scoop the dough and roll into balls and place them about 1-2 inches apart on the baking sheet.
  7. Place in the oven and bake for about 15-20 minutes depending on size of your cookies.
  8. Remove from the oven and let cool for about 5 minutes before moving to cooling rack.
  9. ENJOY!
