Roasted Chipotle & Rosemary Nut Mix

A snack that you will go nuts for!

One thing I can promise is that you are going to go NUTS over this recipe. Solely because its SO GOOD, there are so many yummy sweet & savory flavors packed into the nuts that you won’t know how to react. The best part about making this recipe is all of the wonderful fragrances that fill the house, you will never want to leave OR you may just want to keep making the recipe over and over again. But, I will leave that up to you! This recipe is one that I got from my Aunt, so before you call me a genius, it wasn’t me who came up with this (I think the original recipe is from Food Network) but I want to share it with you all!

Ingredients

What you’re going to need…

LOTS AND LOTS OF NUTS!

  • 1 tbsp vegetable oil
  • 3 cups whole, raw unsalted cashews
  • 2 cups whole walnut halves
  • 2 cups whole pecan halves
  • 1/2 cup whole raw, unsalted almonds
  • 1/3 cup maple syrup
  • 1/4 cup brown sugar
  • 2 tsp ground chipotle powder (or 1 tsp smoked paprika & 1 tsp chili powder)
  • 4 tbsp fresh MINCED rosemary leaves
  • Himalayan pink salt

Method

  1. Preheat your oven to 350F and line a baking sheet with parchment paper.
  2. In a large bowl, combine all of the nuts, the vegetable oil, maple syrup, brown sugar, and powder. Mix well so the nuts are evenly coated.
  3. Add 2 tbsp of the rosemary and 2 tsp of salt. Mix well.
  4. Spread the nuts onto the baking sheet and place in oven for 30 minutes, stirring TWICE throughout.
  5. Remove from the oven and add the remaining rosemary + salt and mix well.
  6. Let cool, but stir often so they don’t clump together (unless that’s what you prefer)
  7. ENJOY!
