Choco-coco Tahini Oat Cookies

A game-changing cookie recipe!

It’s Friday, party people! I could not be more excited to share this recipe with you! I think the biggest struggle of this recipe was coming up with the “title/name” of these cookies because I wanted to highlight everything in them so it’s kind of a mouthful but so are these cookies, and they’re AH-MAZING! Surprisingly, this is my first time baking with tahini, and I was SO nervous about how the cookies were going to turn out. The texture of these is soft, but not gooey, and just the perfect amount of fluff! SO GOOD! Let’s just say I was NOT disappointed so I hope you aren’t either!

Ingredients

Here is what you will need…

  • 1 cup oat flour (I used Bob’s Red Mill)
  • 1 cup tahini
  • 1/2 cup maple syrup
  • 1 egg replacer (using Bob’s Red Mill Egg Replacer)
  • 1/2 cup coconut flakes
  • 1/2 cup old fashioned rolled oats (I used Bob’s Red Mill)
  • 1 tsp baking soda
  • 1 cup mini chocolate chips (I used Enjoy Life brand)
  • Sea salt flakes
The perfect texture!

Method

  1. Preheat the oven to 350F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the oat flour, tahini, maple syrup, chocolate chips, oats, and coconut flakes. Mix well.
  3. Place the bowl in the freezer for 30 minutes to chill.
  4. Prepare your egg replacer while you wait.
  5. Remove the bowl and mix in the remaining two ingredients, baking soda and egg replacer.
  6. Scoop and roll the dough into balls and place onto the baking sheet.
  7. Bake for about 10-12 minutes depending how large your cookies are.
  8. Remove from oven & let cool for 5 minutes before transferring to cooling rack.
  9. ENJOY!
