Peanut Butter Chocolate Oat Bars

The bars you didn’t know you needed… until now!

Hello everyone, and happy Friday Jr., I know it has been a while since I’ve shared a recipe with you, but I’m back with a VERY tasty recipe that I think you all NEED to try. I have an exciting piece of news to share with you all! I have made a BIG purchase (in my opinion) and invested in a Canon camera in order to capture life’s beauty & of course my food in a more quality way other than just using my phone! I am super excited about this new addition and still practicing/learning how to use it properly! So, bear with me while I figure this all out and SOON I should have some very wonderful photos to share with you all! For now, we are going to worry about these wonderful chewy & gooey oat bars!

Ingredients

What you will need…

  • 2 eggs using Bob’s Red Mill Egg Replacer
  • 1 cup brown sugar (or coconut sugar)
  • 2 tsp baking soda
  • 1/2 tsp Himalayan pink salt (or whichever salt you prefer)
  • 2 tsp vanilla extract
  • 2 cups natural Peanut butter (I use Teddies Smooth)
  • 2 cups Bob’s Red Mill Old Fashioned Rolled Oats
  • 1 cup Enjoy Life chocolate chunks (optional)

Method

  1. Heat the oven to 350F and line an 8×8 pan with parchment paper.
  2. Set aside and prepare your egg replacers & let stand for about 5 minutes to thicken.
  3. In a large bowl combine the egg replacers & sugar. Mix well.
  4. Add the baking soda & salt, mix well. Add the vanilla & peanut butter, mix well.
  5. Finally add the oats and chocolate chips.
  6. Spread the batter into the pan evenly.
  7. Bake for 30-35 minutes. Let cool for around 20 minutes & serve warm. Or let cool completely & store!
