Chocolate Banana Oatmeal Cookies

A simple & healthy cookie recipe!

Happy Tuesday, everyone! After a long Memorial Day Weekend filled with sunshine and family time, I’m back with another fun and EASY recipe for you all! These cookies are perfect for a little breakfast bite or just a pick-me-up snack for whenever you please! I hope you guys are ready because I finally remembered to take some more photos of the baking process! YAY!

A few ingredients!

Ingredients

What you will need…

  • 2-3 ripe bananas, one for the banana on top (mine were not spotty but spotty bananas are always best for baking)
  • 1 egg using Bob’s Red Mill Egg Replacer
  • 1.5 cup Bob’s Red Mill Rolled Oats
  • 2 tbsp unsweetened cacao powder
  • 1/4-1/2 cup mini (vegan) chocolate chips
Before Baking

Method

  1. Preheat the oven to 350F, line a baking sheet with foil, and lightly grease.
  2. Prepare your egg replacer and set aside.
  3. In a bowl, mash the bananas completely & stir in the egg replacer after it’s set (about 1-2 minutes)
  4. Add the remaining ingredients and mix until well combined.
  5. Spread the mixture onto the sheet and flatten with your fingers or the back of the spoon, add a banana on top of each cookie if desired.
  6. Bake 13-15 minutes until browned, or tender. Cool on a wire rack & ENJOY!!
Final Product!
