Chocolate Cranberry Almond Blondies

Blondies made with beans, WHAT!?

Sorry I have been very MIA from blogging lately, but I’m back and I’m coming at you with what may be my best recipe YET! These blondies, are vegan, AND flourless, and yes they still taste absolutely amazing. What may surprise you the most about the recipe is that it’s actually made with cannellini beans. I know what you’re thinking, no you cannot taste them, or smell them, you won’t even know they’re in there unless you’re the one making the recipe!

I’ve been having bakers block, if that’s even a thing, struggling with some inspiration on what to bake or cook in the kitchen. So yesterday, I rustled through my mother’s mountains of recipes (yet again) and found some recipes I could pull from and use for some inspiration to create something of my own which is where these yummy morsels came from! So lets get right into the recipe! And apologies AGAIN for not getting enough pictures of the baking process, I am SUCH an amateur.

Ingredients

What you will need…

  • 1 (15 oz) an of cannellini beans, rinsed & drained
  • 1/3 cup rolled oats (I used Bob’s Red Mill)
  • 1/3 cup brown sugar
  • 1/3 cup creamy peanut butter (I used Ted’s Peanut Butter)
  • 1/4 cup unbleached all-purpose flour (I used Bob’s Red Mill)
  • 2 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1/4 cup chopped almonds
  • 1/4 cup dried cranberries
  • 1/4 cup chocolate chunks (or chips) (I used Enjoy Life chocolate chunks)

Method

  1. Preheat your oven to 350F and line an 8×8 inch baking dish with parchment paper. Set aside.
  2. In a food processor (or high power blender) I used my Vitamix. Mix all ingredients except for almonds, cranberries and chocolate chunks until well blended.
  3. Fold in the rest of the ingredients. Spread batter evenly in the dish and bake for 20-25 minutes or until toothpick comes out clean. I baked closer to 30 minutes.
  4. Cool completely and then cut into bars!
  5. ENJOY!
