The perfect meal and/or side dish!
Happy Monday, everyone! I hope your week is off to a great start. We all have different feelings towards the first day of the week, but it’s all what you make of it! You create your own destiny, so a positive attitude will go a long way! This is something that I definitely learned the hard way so I like to share that with people as a general “tip” if you will. It may be cliche but it’s so true!
After a weekend in the city eating all the YUMMY food & drinks to celebrate graduation weekend & of course Mother’s Day too, I was in major need of some veggies! I whipped out my bag of rainbow carrots from Trader Joe’s and found a wonderful recipe on the back for these Sweet and Spicy carrots. I did make a few changes because of ingredients I was missing & to make it vegan so I thought I would share it with you all!

Ingredients
What you will need…
- 4 large Rainbow Carrots (of course, adjust to quantity desired)
- 2-3 tbsp vegan butter
- 1/4 cup brown sugar
- 1/8 tsp cayenne pepper
- 1/8 tsp ground cinnamon
- Sea Salt
- Black Pepper

Method
- In a skillet melt the butter over medium heat.
- Stir in the brown sugar, cayenne and cinnamon and heat until the mixture turns liquid.
- Cut the carrots into coins (to desired thickness) and add to the mixture.
- Sprinkle with salt & pepper and cook until they’re tender and glazed (about 15-20 minutes)
