General Tso’s Oven Baked Tofu Salad

An exciting & flavorful tofu recipe!

I cannot stop thinking about last nights dinner that I made, so I thought I would share all the details with you! For the LONGEST time, I have been trying to convince myself to cook tofu. I love getting it when I eat out or if it’s already cooked for me, but for some reason I could never get myself to take on the challenge. Probably because the first time I bought tofu & tried to cook it, it didn’t turn out well AT ALL.

After reading up on how to cook tofu every article said to press it… so I literally pressed it so hard that it was no longer tofu but more like mashed tofu (LOL). After that attempt, I gave up for a while but last night I finally took the plunge. This time, I didn’t press it that hard 😉 Sometimes the texture of tofu gets to me (in the wrong ways) so I wanted to make sure that I marinated it in something that could help me get passed that which is where the General Tso’s came from. Trust me, you will NOT regret this decision.

During preparation, the sauce turned out so good!

Ingredients

What you will need…

For the tofu

  • 1 container cubed Nasoya Extra Firm Tofu
  • 6 tbsp low-sodium soy sauce
  • 6 tbsp apple cider vinegar
  • 6 tbsp corn starch
  • Few cloves of minced garlic

For the sauce

  • 3 tbsp low-sodium soy sauce
  • 3 tbsp apple cider vinegar
  • 3 tbsp coconut sugar
  • 3 tbsp vegetable broth
  • 1 tbsp cornstarch
Final Product!

Method

  1. Start by pressing the tofu between 2 baking sheets for about 30 minutes
  2. Preheat the oven to 400 F. After tofu has been pressed, combine the apple cider vinegar and soy sauce in a medium sized bowl.
  3. Add the tofu and let soak for about 5 minutes. ** you want to make sure your tofu is covered so you may need to adjust measurements**
  4. Place half of the tofu in a ziploc bag or container and coat with 3 tbsp of corn starch. Repeat with the other half.
  5. Spread the tofu pieces on a parchment paper lined baking sheet and put in the oven for about 30 minutes. Shaking the tofu halfway through.
  6. Brown the garlic in a pan on the stovetop and add ingredients for the sauce. When the tofu is finished add the pieces into the sauce and fully coat.
  7. Add to a bed of salad and faro & enjoy!!
