Thick AF Double PB Bars

The thickest peanut butter bars you will ever eat!

If you follow Eat Natural with Nat on Instagram, you know that I gave all my followers a teaser of these double peanut butter bars a few days ago, and I’m FINALLY getting around to sharing the recipe with you all! YAY! If you know me, you know that I’m absolutely obsessed with everything and anything peanut butter, so these were an absolute MUST for me. They were a hit for my family too, which is always a plus!

This recipe is a tiny bit more involved than others (at least for me) as I needed to break out the electric mixer which is a rare occasion. I tried to make it work with a hand blender but the batter went flying everywhere and that was just not a good experience! Another quick tip before I get into the recipe, make sure you have lots of peanut butter on hand! *DISCLAIMER* this recipe is in no way sponsored by any brands, these are just the products that I have on hand and use very often! You can use any brand you please!

I did not use Super Chunky in this recipe but it was the only jar I had left for the photo!

Ingredients

What you will need-

For the base:

  • 1 1/3 cups Bob’s Red Mill unbleached all-purpose flour
  • 1/3 cup Bob’s Red Mill whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 1/2 cups Bob’s Red Mill rolled oats
  • 3/4 cup Teddies smooth peanut butter
  • 3/4 cup packed light brown sugar
  • 1/2 cup coconut sugar (or any unrefined sugar will work)
  • 1/2 cup of stick vegan butter, softened
  • 2 eggs made with Bob’s Red Mill Egg Replacer (follow directions on back of package)
  • 1 tsp vanilla
  • 1/3 cup coconut milk

For the icing:

  • 3 tbsp Teddies smooth peanut butter
  • 1 1/2 tbsp vegan stick butter
  • 2/3 cup powdered sugar
  • 1 tbsp coconut milk
The final product!

Method

  1. Preheat the oven to 350 degrees F, and line a 9×13 baking pan with foil; lightly coat with nonstick spray.
  2. In medium sized bowl mix together the first 6 ingredients; set aside.
  3. With an electric mixed (or hand mixer if you’re brave) beat the PB, brown sugar, coconut sugar, and butter.
  4. Slowly add in the egg replacer & vanilla, followed by half of the flour mixture and half of the milk.
  5. Repeat with the other half of the flour mixture & milk and beat until well mixed.
  6. Spread evenly into pan and cook for around 20-30 minutes until edges are golden and toothpick comes out clean.
  7. While cooking, combine the peanut butter & butter in a bowl & microwave until melted. add the rest of the ingredients & whisk until smooth.
  8. Immediately spread icing on cake & cool COMPLETELY before slicing into bars!
