Fried Cauliflower Rice

A healthy twist on traditional fried rice!

So it’s a Friday, and I thought what better time to make some FRI-ed rice?! Am I right? HA! Yet another corny joke on my end. Before becoming vegan, I had no clue how versatile almost ALL of our foods can be, I always limited my foods to one thing, especially veggies. For example, I thought I could only eat my carrots with ranch, and celery with peanut butter. But this is definitely not the case! One of the things I am most grateful for in my journey of becoming vegan is how much it has opened my eyes to the world regarding food, and just the food industry in general.

Simple, healthy ingredients

I am sharing this recipe with you today because I have a new found love for this cauliflower fried rice & I hope you guys will too! It’s absolutely so delicious & flavorful and somehow I managed to incorporate about 5-6 different veggies into this dish! How cool is that?!

Ingredients

The ingredients in this recipe I pulled straight out of my freezer & one from the fridge & tossed them all into this pan to get cookin’!

What you will need:

  • 1 bag of Green Giant frozen cauliflower rice (of course you can always make your own)
  • 1 cup frozen/fresh corn
  • 1 cup frozen shelled edamame
  • 1 cup chopped rainbow carrots (or regular carrots will do)
  • About 1/4 cup diced onion
  • 1-2 cloves minced garlic
  • 1 tbsp olive oil
  • 2 tsp thai chili paste/sauce
  • 1- 1.5 tbsp low sodium soy sauce
  • 1 tsp toasted sesame oil

You can add as many & any vegetables of your choice to this dish! Some other examples are peas, bell peppers, etc. whatever you have in your fridge or freezer will work! I also have to note that I have been using frozen diced onions and they are absolutely wonderful! You don’t have to deal with your fridge getting smelly or ruining containers with the smell either!

The finished product served over a bed of massaged kale!

Method

  1. Start by heating the oil in a pan over medium heat. Add in the garlic and onion and cook until golden
  2. Meanwhile prepare all of the vegetables. Add all the veggies to the pan except the cauliflower rice. Cover and cook for about 5 minutes until they start to tenderize.
  3. Add the cauliflower, chili paste, soy sauce & sesame oil and stir until well mixed. Cover & cook for another 5 minutes stirring often!
  4. Serve however you desire! I served mine over a bed of kale!
