The best crumble bars EVER!

Have you ever had a memory from your childhood that is still so vivid even in your adult days? I know I definitely have a lot of those that come to mind often. Recently I was reminiscing on the time that my dad would bring home strawberry shortcake ice cream bars for my siblings and I and we were always told to sit on the front stoop to eat them so we wouldn’t get the crumbs all over the place. That’s what inspired these super yummy vegan Strawberry Oat Crumble Bars.

Ingredients
When I was thinking about how I was going to make these bars happen, I thought about a recipe that my mom used to make with these yummy crumbles on top, so I ended up combining the crumbles with some simple strawberries!
What you will need:
- 1/2 cup Rolled Oats
- 1/2 cup packed Brown Sugar
- 1 1/2-2 sticks of Vegan Butter
- 2 cups All Purpose Unbleached Flour
- 1 cup (Chopped) Almonds or Pecans
- 10oz Diced Fresh Strawberries
- 2 tbsp Coconut Sugar
- 1 tbsp Cornstarch
- Splash of Lemon Juice
This meshing of two recipes really turned out well, and the combination of textures made these bars super tasty & enjoyable!
Method
For the crumbles:
Mix the rolled oats, brown sugar, vegan butter, all purpose unbleached flour, and nuts together on a baking sheet and bake in the oven @350 degrees for 20 minutes, making sure to stir every 5 minutes.
For the filling:
Dice 10oz of strawberries and place in a bowl & coat with coconut sugar, cornstarch & lemon juice.
After the crumbles are done baking, press half of the mixture into the bottom of a parchment paper lined 8×8 pan, cover with strawberry mixture and then layer on the remaining crumble mixture & bake in the oven @350 degrees for 30-40 minutes. LET COOL COMPLETELY before cutting into them. They are very crumbly so if not cooled properly there’s a high chance they may fall apart!
